- PROBLEM TO BE SOLVED: To provide a method for inexpensively powdering acetic acid vinegar or organic acid vinegar without causing its deterioration.SOLUTION: A spray drying with vehicle addition following concentrating any one of various kinds of vinegar in advance results in production cost reduction because reduced-pressure concentration cost is lower than that of spray drying alone. However, in the case of an ordinary batch-type pressure-reducing apparatus, as heating time is relatively long, discoloration and additionally scorching become problematic, flavor coming poor as well. In order to solve these problems, by concentrating vinegar using a centrifugal thin-film type concentration machine evaporator, heating time can be significantly shortened, resulting in markedly ameliorating discoloration, scorching and flavor deterioration.
