Detailed Technology Description
The solution refers to the use of mechanically processed meat of fresh water fish (separate) and of less valuable parts of a fish body for a durable food of a good quality. The aim is to use the muscles of fresh water fish - mechanically processed fish meat (separate) and the less valuable parts of a fish body (muscles from fish skeletons, tail parts of fish etc.) to make a durable food – without an addition of preservatives, suitable for a gluten-free diet and for children’s diet.
Producing the Fish luncheon meat we do not use any stabilizers, dyes, nor taste markers. The product is naturally gluten-free and is suitable for a gluten-free diet.
At present similar durable food from processed fresh water fish cannot be found in a Czech market. From the dietary and healthy point of view this product from carp meat can meet with a great interest at the customers. The product is taste balanced and if it is cut it is also aesthetically interested. On a cut it makes a mosaic of separated meat completed with pieces of cut carp meat.
The ready product is heat treated and closed in a glass dish. The salt contain is up to three per cent. Fish luncheon meat is a highly dietetic food from local recourses suitable for a healthy life style.
