The solution refers to the branch of food industry, especially to heat treated dishes made from fish food.
This task is solved by making a heat treated dish from fish meat on the basis of fish minced meat according to the following technical solution. The heart of the technical solution is based on the thoroughly worked minced meat which contains at least 90% weight of carp meat, 5% weight of cream, 1% weight of egg mass, 1 to 2% weight of spice and 1 to 2 % fish bouillon. The advantage is, according to the technical solution, the fish dish doesn’t contain any preservatives, stabilization agents, dyes, or substances for increasing the volume.
The spice contains ground pepper, allspice, bay-leaf, nutmeg and juniper. This combination gives the dish demanding taste qualities.
The thoroughly worked minced meat is defined by the diameter of the hole of the mincing sieve 0.1 mm. The fineness of the minced meat like this enables the easy stirring and the conflation of the dish.
In the advantageous version the dish from the fish meat contains almonds and /or dried fruit and /or pickled pepper and/or mushrooms and/or their mixture. These supplements make the taste of the product better and increase its variability.
According to the technical solution, the advantages of a heat treated product are based on a high taste quality thanks to the absence of preservative substances, stabilizers, dyes and fillers on the base of starch or soya. The product is of a high diet value and it is suitable for a gluten-free diet.
