- McGill University has developed new compositions enriched in phytochemicals having antioxidant and/or anti-inflammatory activity derived from select cultivars of potato (Solanum tuberosum L.). These compositions could be used to prevent or treat a wide variety of health disorders associated with pollution exposure.

Applications
These compositions can work synergistically in terms of their health benefits against of a variety of types of pollutant exposures. Potential markets are adults, children, and pets with chronic inflammatory diseases that are aggravated by pollution such as asthma, complications related to heart disease, hypertension, chronic obstructive lung disease, and eye irritation. Additionally, such potato extracts could protect against the development of immune dysregulation and lower IQ associated with chronic pollutant exposures. These compositions could be in the form of supplements, functional foods, or bioactive pharmaceutical ingredients.
