Authenticity Verification System for Verifying Genuine Edible Bird’s Nest (EBN)

The technology is applied to distinguish real and fake edible bird’s nest by observing the absence of epidermal growth factor, five monoses and the surface morphology.

 

It is also able to verify different grades of edible bird’s nest by determining the content of epidermal growth factor.

 

 

Summary

Edible bird’s nest (EBN), so called “Yen Wo”, is a prestigious and superior health food composed of saliva from swallow and other materials. It contains high contents of protein, carbohydrate, bioactive mucoids and epidermal growth factor (EGF) which stimulates proliferation of various epidermal and epithelial tissues. Like other counterfeit/adulterated food products, fake edible bird’s nest has aroused grave public concerns towards food safety. In this work, a comprehensive authenticity verification system for verifying genuine EBN has been established. In addition to the gas chromatography-mass spectrometric (GC-MS) technique, the approach stresses the application of immunoblotting and scanning electron microscopic (SEM) techniques. With this concerted approach, real or fake edible bird’s nest can be distinguished based on the presence of epidermal growth factor, five monoses and/or the unique surface morphology.
